Weight-Loss Cabbage Soup

Ingredients

  • ½ medium green cabbage, chopped
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, no added sugar
  • 4 cups low-sodium vegetable or chicken broth
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • Salt, to taste
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Cook for 3–4 minutes until slightly softened.
  3. Add the chopped cabbage and cook for another 2 minutes.
  4. Stir in the diced tomatoes, broth, paprika, black pepper, oregano, and a small amount of salt.
  5. Bring the soup to a boil.
  6. Reduce the heat, cover, and simmer for 20–25 minutes, or until the cabbage and vegetables are tender.
  7. Stir in the lemon juice and adjust the seasoning.
  8. Garnish with fresh parsley and serve hot.
