🍎 High-Protein Apple Fritter Bites

🥣 Ingredients — 12 bites

Fritter mixture

  • 1 medium apple, peeled and finely diced
  • 100 g nonfat Greek yogurt
  • 1 large egg
  • 30 g vanilla whey protein powder
  • 60 g oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • 1–2 tbsp honey or zero-calorie sweetener
  • Pinch of salt
  • 1–2 tbsp milk, only if the batter is too thick

Optional glaze

  • 30 g powdered sweetener
  • 1–2 tsp milk
  • Tiny splash of vanilla

👨‍🍳 Instructions

  1. Preheat your oven to 180°C / 350°F. Line a baking tray with parchment paper.
  2. Dice the apple into very small pieces. Pat them dry if they’re particularly juicy.
  3. In a bowl, whisk together the Greek yogurt, egg, vanilla, and honey/sweetener.
  4. Add the oat flour, protein powder, baking powder, cinnamon, and salt. Mix until combined.
  5. Fold in the diced apple. The mixture should be thick and scoopable, not runny.
  6. Let the mixture sit for 3–5 minutes so the oat flour absorbs some moisture.
  7. Scoop into 12 small mounds on the baking tray. Slightly flatten the tops.
  8. Bake for approximately 15–20 minutes, until the edges are golden and the centers are cooked through.
  9. For a crispier exterior, air-fry at 190°C / 375°F for 2–4 minutes after baking.
  10. Mix the glaze ingredients and drizzle lightly over the cooled fritter bites.
  11. Finish with a little cinnamon.
