Ingredients
- 1 lb (450 g) ground beef
- 1 packet taco seasoning, preferably low-carb
- ½ cup salsa, no added sugar
- 4 oz (115 g) cream cheese
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack or Mexican-blend cheese
- ½ cup diced tomatoes
- ¼ cup diced onion
- 1 small bell pepper, diced
- 1–2 tbsp chopped jalapeños, optional
- ½ cup sour cream, for serving
- Fresh cilantro and avocado, optional
Instructions
- Heat oven to 375°F (190°C).
- Brown the ground beef in a skillet. Drain excess grease.
- Add taco seasoning, salsa, onion, and bell pepper. Cook for 3–4 minutes.
- Stir in the cream cheese until melted and combined.
- Transfer to a greased 9×9-inch baking dish.
- Sprinkle cheddar and Monterey Jack over the top.
- Add diced tomatoes and jalapeños.
- Bake for 20–25 minutes, until hot and bubbly.
- Top with sour cream, cilantro, and avocado before serving.
Low-carb tip: For a keto-friendly version, use salsa without added sugar and check the taco-seasoning label for hidden starches or sugar. Serve with lettuce, cauliflower rice, or simply enjoy it on its own instead of tortilla chips.
