Ingredients

Cheesecake Base

  • 8 oz (226 g) reduced-fat cream cheese, softened
  • 1 cup (240 g) non-fat Greek yogurt
  • 1 cup (225 g) low-fat cottage cheese
  • 1 cup (240 ml) Fairlife fat-free milk
  • 1 package (1 oz / 28 g) sugar-free cheesecake instant pudding mix
  • 1 cup (225 g) light whipped topping (such as Lite Cool Whip)
  • 1 tsp vanilla extract
  • 2–3 tbsp powdered erythritol or monk fruit sweetener (optional, to taste)

Berries

  • 1½ cups strawberries, diced
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries

Optional Topping

  • ¼ cup crushed sugar-free graham crackers
  • Fresh mint leaves
  • Extra berries

Instructions

Step 1: Make the Cheesecake Mixture

  1. Beat the softened cream cheese until smooth.
  2. Add the Greek yogurt and cottage cheese. Blend until creamy.
  3. Pour in the Fairlife milk and vanilla extract.
  4. Add the sugar-free cheesecake pudding mix.
  5. Beat for 2–3 minutes until thick.
  6. Taste and add sweetener if needed.
  7. Gently fold in the light whipped topping until fluffy.

Step 2: Prepare the Fruit

  1. Wash all berries thoroughly.
  2. Pat completely dry.
  3. Dice the strawberries into bite-sized pieces.

Step 3: Assemble

  1. Fold the strawberries, blueberries, blackberries, and raspberries into the cheesecake mixture.
  2. Stir gently to avoid crushing the berries.

Step 4: Chill

Cover the bowl and refrigerate for 1 hour to allow the flavors to develop.

Step 5: Serve

Spoon into dessert cups and top with:

  • Fresh berries
  • Sugar-free graham cracker crumbs (optional)
  • Mint leaves (optional)
