Ingredients

Cheesecake Filling

  • 250 g (8 oz) cream cheese, softened
  • 250 ml (1 cup) heavy whipping cream, cold
  • 60 g (½ cup) powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional, for authentic cheesecake flavor)
  • Pinch of salt

Strawberry Sauce

  • 250 g (2 cups) fresh strawberries, chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water

Cookie Crust

  • 150 g (1½ cups) crushed digestive biscuits or Graham crackers
  • 60 g (¼ cup) melted unsalted butter

Topping

  • 150 g (1 cup) fresh strawberries, diced
  • Extra crushed biscuits
  • Strawberry sauce for drizzling

Instructions

Step 1: Make the Strawberry Sauce

  1. Add chopped strawberries, sugar, and lemon juice to a saucepan.
  2. Cook over medium heat for 5–7 minutes until soft.
  3. Mix cornstarch with water and stir into the strawberries.
  4. Cook for another 1–2 minutes until thick.
  5. Let the sauce cool completely.

Step 2: Make the Cookie Base

  1. Mix crushed biscuits with melted butter.
  2. Stir until the crumbs resemble wet sand.
  3. Set aside.

Step 3: Prepare the Cheesecake Filling

  1. Beat the cream cheese until smooth.
  2. Add powdered sugar, vanilla, lemon juice, and salt.
  3. Mix until creamy.
  4. In another bowl, whip the cold heavy cream to stiff peaks.
  5. Fold the whipped cream gently into the cream cheese mixture until light and fluffy.

Step 4: Assemble the Bowl

  1. Add a layer of biscuit crumbs to the bottom.
  2. Spoon over a thick layer of cheesecake filling.
  3. Add a few spoonfuls of strawberry sauce.
  4. Repeat another layer of cheesecake filling.
  5. Swirl extra strawberry sauce on top.
  6. Garnish with fresh diced strawberries.
  7. Sprinkle crushed biscuit crumbs over the top.

Step 5: Chill

Refrigerate for at least 2 hours, or overnight for the best texture.


Tips for the Best Cheesecake Bowl

  • Use full-fat cream cheese for the richest flavor.
  • Chill the heavy cream before whipping.
  • Don’t overmix after folding the whipped cream.
  • Allow the strawberry sauce to cool completely before layering.
  • For extra crunch, add the biscuit crumbs just before serving.
