Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup sliced almonds
  • 1/2 cup sweetened shredded coconut
  • 1 ½ cup white chocolate chips
Preparation
  1. In a mixing bowl or the bowl of a stand mixer, beat the butter and both sugars together with an electric mixer until light and fluffy, about 3 minutes.
  2. Add eggs and vanilla and beat until well combined.
  3. Add flour, salt, baking powder, and baking soda, and mix until just combined.
  4. Stir in oats, almonds, and coconut. Add white chocolate chips and stir to incorporate.
  5. Chill dough at least 1 hour or up to 24.
  6. When ready to bake, preheat oven to 350°F and line a baking sheet with parchment paper.
  7. Scoop out in 1/4 cup portions onto prepared baking sheets, leaving 2 inches between each scoop.
  8. Bake until golden around the edges,13-15 minutes. Let cool 5 minutes on baking sheet before removing.
