Diabetic-Friendly Chicken Alfredo Soup

Ingredients

  • 1 cup cooked shredded chicken breast
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk (or low-fat milk)
  • ¼ cup light cream cheese or ½ cup Greek yogurt
  • 1 cup cauliflower florets (small pieces)
  • ½ cup broccoli (optional)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil or butter
  • ¼ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • Salt & black pepper
  • Optional: zucchini noodles (instead of pasta)

Instructions

  1. Sauté base
    Heat oil, sauté garlic until fragrant.
  2. Simmer
    Add broth, cauliflower, and broccoli. Cook 10–12 minutes until tender.
  3. Blend (optional for creaminess)
    Blend part of the soup for a thicker texture without flour.
  4. Add protein & creaminess
    Stir in chicken, almond milk, and cream cheese or yogurt.
  5. Finish
    Add Parmesan, seasoning, salt, and pepper. Simmer 3–5 minutes (don’t boil if using yogurt).
  6. Optional noodles
    Add zucchini noodles for a pasta-like feel without carbs.
