Diabetic-Friendly “Cordon Bleu” Ring (Low-Carb Version)

Ingredients

“Dough” base (choose one)

  • Option 1 (low-carb):
    1½ cups almond flour
    1 cup shredded mozzarella
    2 tbsp cream cheese
    1 egg
  • Option 2 (moderate carb):
    Whole wheat crescent dough (use less and make a thinner ring)

Filling

  • 1½ cups cooked shredded chicken breast
  • 4–6 slices lean turkey ham (or chicken ham)
  • ½ cup shredded Swiss or mozzarella cheese (reduced-fat if preferred)
  • 2 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • Black pepper

Instructions

  1. Make low-carb dough (if using almond flour)
    Melt mozzarella + cream cheese, mix with almond flour and egg to form dough.
  2. Shape the ring
    Place dough on a baking tray in a ring shape (like a wreath).
  3. Prepare filling
    Mix chicken, yogurt, mustard, pepper, and chopped ham.
  4. Assemble
    Spread filling over the dough ring, sprinkle cheese, fold edges over slightly.
  5. Bake
    180°C (350°F) for 20–25 minutes until golden.
