Diabetic-Friendly Roasted Cauliflower Steaks

Ingredients

  • 1 large cauliflower (cut into 1-inch thick “steaks”)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika (or smoked paprika)
  • ½ tsp turmeric (optional)
  • Salt & black pepper to taste
  • 1 tbsp lemon juice
  • Fresh parsley or cilantro (for garnish)

Instructions

  1. Prep cauliflower
    Remove leaves and slice into thick steaks (keep core intact so they hold together).
  2. Season
    Mix olive oil with spices and brush both sides of each steak.
  3. Roast
    Bake at 200°C (400°F) for 20–25 minutes, flipping halfway, until golden and tender.
  4. Finish
    Drizzle with lemon juice and sprinkle herbs before serving.
