Diabetic-Friendly Chicken & Zucchini (Lemon Garlic)
🧾 Ingredients (2 servings)
- 2 boneless chicken breasts (or thighs)
- 2 medium zucchini (sliced or cut into sticks)
- 2 tbsp olive oil
- 3–4 garlic cloves (minced)
- Juice of 1 lemon
- ½ tsp black pepper
- ½ tsp paprika
- Salt to taste
- Fresh parsley or coriander (optional)
👩🍳 Instructions
1. Season the chicken
- Rub with salt, pepper, and paprika.
2. Cook chicken
- Heat 1 tbsp oil in a pan.
- Cook chicken on medium heat for 5–6 minutes per side until golden and cooked through.
- Remove and set aside.
3. Cook zucchini
- In the same pan, add remaining oil and sauté zucchini for 3–4 minutes (keep slightly crisp).
4. Make lemon garlic sauce
- Add garlic to the pan, cook briefly (don’t burn).
- Add lemon juice and a splash of water.
- Stir and let it simmer lightly.
5. Combine
- Return chicken to the pan and coat with sauce.
- Cook 2 more minutes.
