- 1 lb (450g) chicken breast, pounded thin
- ½ cup shredded part-skim mozzarella or smoked cheese
- 2–3 jalapeños, sliced (remove seeds for less heat)
- 2 tsp smoked paprika
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 tsp olive oil (for baking or searing)
- Optional: fresh cilantro for garnish
👩🍳 Instructions
- Preheat oven
To 190°C (375°F). Line a baking dish with parchment or lightly grease. - Prepare chicken
Lay chicken breasts flat and season with smoked paprika, garlic powder, salt, and pepper. - Add filling
Place shredded cheese and jalapeño slices on each chicken breast. - Roll chicken
Roll the chicken tightly and secure with toothpicks if needed. - Cook
- Oven method: Brush lightly with olive oil and bake 20–25 minutes until chicken is fully cooked.
- Stovetop method: Sear rolls in a skillet with a little oil over medium heat, turning to brown all sides, then finish in the oven for 10–15 minutes.
- Serve
Slice rolls if desired and garnish with fresh cilantro. Pair with roasted vegetables or salad.
