🥣 Ingredients
- 1 medium cauliflower head, cut into florets
- 2 large eggs (or ½ cup Greek yogurt for coating)
- ½ cup chickpea flour or almond flour (high-protein coating)
- ¼ cup grated Parmesan cheese (optional, boosts protein & flavor)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- Freshly ground black pepper
- Olive oil spray

- Preheat oven
To 220°C (425°F). Line a baking sheet with parchment. - Prepare coating
In one bowl, whisk eggs (or Greek yogurt).
In another bowl, mix chickpea flour, Parmesan, garlic powder, paprika, salt, and pepper. - Coat cauliflower
Dip each floret into egg/yogurt, then toss in flour mixture until well coated. - Arrange on baking sheet
Place florets in a single layer, spray lightly with olive oil. - Roast
Bake 20–25 minutes, flipping halfway, until crispy and golden.

- Chickpea flour + Parmesan add 10–15g protein per serving
- Serve with Greek yogurt-based dip (e.g., tzatziki) for extra protein
