- Preheat oven
To 220Β°C (425Β°F). Line a baking sheet with parchment. - Prepare coating
In one bowl, whisk eggs (or Greek yogurt).
In another bowl, mix chickpea flour, Parmesan, garlic powder, paprika, salt, and pepper. - Coat cauliflower
Dip each floret into egg/yogurt, then toss in flour mixture until well coated. - Arrange on baking sheet
Place florets in a single layer, spray lightly with olive oil. - Roast
Bake 20β25 minutes, flipping halfway, until crispy and golden.
