🧾 Ingredients

  • 4 cups sliced cucumbers
  • 1 small onion (thinly sliced)
  • 1 tbsp salt

Pickling liquid:

  • 1 cup apple cider vinegar
  • 1/2 cup erythritol (or monk fruit blend)
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1/2 tsp celery seeds
  • 1/4 tsp black pepper

👩‍🍳 Instructions

  1. Salt cucumbers
    • Toss cucumbers + onion with salt
    • Let sit 1–2 hours (draws out moisture)
    • Rinse and drain well
  2. Make brine
    • Heat vinegar, sweetener, and spices
    • Stir until sweetener dissolves
  3. Combine
    • Add cucumbers and onions to hot brine
    • Simmer 2–3 minutes (don’t overcook)
  4. Cool & store
    • Let cool, then refrigerate
    • Ready in 24 hours (better after 2–3 days)
