🧾 Ingredients
- 4 cups sliced cucumbers
- 1 small onion (thinly sliced)
- 1 tbsp salt
Pickling liquid:
- 1 cup apple cider vinegar
- 1/2 cup erythritol (or monk fruit blend)
- 1 tsp mustard seeds
- 1/2 tsp turmeric
- 1/2 tsp celery seeds
- 1/4 tsp black pepper

- Salt cucumbers
- Toss cucumbers + onion with salt
- Let sit 1–2 hours (draws out moisture)
- Rinse and drain well
- Make brine
- Heat vinegar, sweetener, and spices
- Stir until sweetener dissolves
- Combine
- Add cucumbers and onions to hot brine
- Simmer 2–3 minutes (don’t overcook)
- Cool & store
- Let cool, then refrigerate
- Ready in 24 hours (better after 2–3 days)
