Homemade Pickled Beets (Low-Sugar / Diabetic-Friendly)

🧾 Ingredients
- 3–4 medium fresh beets
- 1 cup apple cider vinegar (or white vinegar)
- ½ cup water
- 1–2 tbsp erythritol or stevia (adjust to taste)
- ½ tsp salt
- ½ tsp black peppercorns
- 2–3 cloves garlic (optional)
- 1 small onion (sliced, optional)
- 1 bay leaf
👩🍳 Instructions
1. Cook the beets
- Wash and boil beets for 25–30 minutes until tender
- Cool, peel, and slice into rounds or cubes
2. Make the brine
- In a pot, combine vinegar, water, sweetener, salt, and spices
- Bring to a gentle boil, then simmer 2–3 minutes
3. Pickle
- Place sliced beets into a clean glass jar
- Pour hot brine over them until fully covered
4. Cool & store
- Let cool completely
- Refrigerate for at least 24 hours before eating
