1. Cook the beets
- Wash and boil beets for 25β30 minutes until tender
- Cool, peel, and slice into rounds or cubes
2. Make the brine
- In a pot, combine vinegar, water, sweetener, salt, and spices

3. Pickle
- Place sliced beets into a clean glass jar
- Pour hot brine over them until fully covered
4. Cool & store
- Let cool completely
- Refrigerate for at least 24 hours before eating
