One Pan Beef Stroganoff

Ingredients (4 servings)

  • 1 lb lean ground beef (93% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 ½ cups whole wheat egg noodles
  • ½ cup plain non-fat Greek yogurt
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add onions and garlic, sauté for 2 minutes.
  2. Brown the beef, breaking it up with a spatula, until fully cooked. Drain excess fat if needed.
  3. Add mushrooms and cook until softened, about 3-4 minutes.
  4. Stir in Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
  5. Pour in beef broth and bring to a simmer. Add noodles and cook for 8-10 minutes, stirring occasionally until tender.
  6. Remove from heat and stir in Greek yogurt until creamy. Adjust seasoning if needed.
  7. Garnish with parsley and serve warm!
