Zero Point Chicken Stir-Fry

Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cut into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large carrot, julienned
  • 1 cup snap peas
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1 cup broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp oyster sauce (optional, check for zero points)
  • 1/2 tsp sesame oil (optional, check for zero points)
  • Cooking spray

Instructions

  1. Prepare the Sauce: In a small bowl, mix together the soy sauce, rice vinegar, and oyster sauce (if using). Set aside.
  2. Cook the Chicken: Spray a large non-stick skillet or wok with cooking spray and heat over medium-high heat. Add the chicken strips and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the onions, garlic, and ginger. Sauté for about 2 minutes until fragrant. Add the bell peppers, carrot, snap peas, and broccoli florets. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
  4. Combine Chicken and Vegetables: Return the chicken to the skillet with the vegetables. Pour the sauce over the top and stir well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  5. Serve: Drizzle with sesame oil if using and serve hot.
