Zero Point Chicken Stir-Fry

Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cut into thin strips
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 large carrot, julienned
- 1 cup snap peas
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 1 cup broccoli florets
- 1/4 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp oyster sauce (optional, check for zero points)
- 1/2 tsp sesame oil (optional, check for zero points)
- Cooking spray
Instructions
- Prepare the Sauce: In a small bowl, mix together the soy sauce, rice vinegar, and oyster sauce (if using). Set aside.
- Cook the Chicken: Spray a large non-stick skillet or wok with cooking spray and heat over medium-high heat. Add the chicken strips and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the onions, garlic, and ginger. Sauté for about 2 minutes until fragrant. Add the bell peppers, carrot, snap peas, and broccoli florets. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
- Combine Chicken and Vegetables: Return the chicken to the skillet with the vegetables. Pour the sauce over the top and stir well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Serve: Drizzle with sesame oil if using and serve hot.
