WW turkey meatloaf
Ingredients:
- 1.5 pounds lean ground turkey
- 1 cup whole wheat breadcrumbs
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 1/2 cup carrots, grated
- 2 cloves garlic, minced
- 1/4 cup ketchup (plus extra for topping)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Breadcrumbs: In a small bowl, mix the breadcrumbs with almond milk. Allow it to sit for a few minutes until the breadcrumbs absorb the milk.
- Prepare Vegetables: In a skillet over medium heat, sauté the onion, bell pepper, carrots, and garlic until softened. Allow them to cool.
- Mix Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumb mixture, sautéed vegetables, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and pepper. Mix until well combined.
- Form Loaf: Shape the mixture into a loaf and place it in a baking dish or on a baking sheet sprayed with cooking spray.
- Top with Ketchup: Spread a thin layer of ketchup over the top of the meatloaf.
- Bake: Bake in the preheated oven for approximately 45-55 minutes or until the internal temperature reaches 165°F (74°C).
- Rest and Slice: Allow the meatloaf to rest for a few minutes before slicing.
- Serve: Serve slices of the turkey meatloaf with your favorite sides.
