WW turkey meatloaf

Ingredients:

  • 1.5 pounds lean ground turkey
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup unsweetened almond milk (or any milk of your choice)
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, finely chopped
  • 1/2 cup carrots, grated
  • 2 cloves garlic, minced
  • 1/4 cup ketchup (plus extra for topping)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Breadcrumbs: In a small bowl, mix the breadcrumbs with almond milk. Allow it to sit for a few minutes until the breadcrumbs absorb the milk.
  3. Prepare Vegetables: In a skillet over medium heat, sauté the onion, bell pepper, carrots, and garlic until softened. Allow them to cool.
  4. Mix Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumb mixture, sautéed vegetables, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, salt, and pepper. Mix until well combined.
  5. Form Loaf: Shape the mixture into a loaf and place it in a baking dish or on a baking sheet sprayed with cooking spray.
  6. Top with Ketchup: Spread a thin layer of ketchup over the top of the meatloaf.
  7. Bake: Bake in the preheated oven for approximately 45-55 minutes or until the internal temperature reaches 165°F (74°C).
  8. Rest and Slice: Allow the meatloaf to rest for a few minutes before slicing.
  9. Serve: Serve slices of the turkey meatloaf with your favorite sides.
