zucchini, mushroom/spinich mixture, and mozz cheese

For the size I made:
2 packs of mushrooms
2 zucchini
1 container of fresh spinach
Panko bread crumbs (1/2 cup)
Shredded mozzarella cheese (1/4 cup)
Saute your sliced mushrooms and spinach with salt, lemon pepper, and onion powder. Then get your baking dish (spray with cooking spray), then layer semi thick slices of raw zucchini, mushroom/spinich mixture, and mozz cheese. I did two layers. On top cover with panko bread crumbs and drizzle olive oil. Bake uncovered for 30 min on 350.
