Weight Watchers Taco Casserole

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 packet (1 oz) taco seasoning mix (check for low-sodium or make your own blend)
  • 1 cup salsa (choose your preferred heat level)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup reduced-fat shredded cheddar cheese
  • Optional toppings: chopped fresh cilantro, diced tomatoes, sliced jalapeños, diced avocado, low-fat sour cream

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground turkey or chicken over medium heat until browned and cooked through, breaking it up into crumbles as it cooks. Drain off any excess fat.
  3. Stir in the taco seasoning mix, salsa, black beans, and corn kernels. Cook for 2-3 minutes, stirring occasionally, until heated through and well combined.
  4. Transfer the mixture to the prepared baking dish and spread it out evenly.
  5. Sprinkle the shredded cheese over the top of the casserole.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool slightly before serving.
  8. Garnish with optional toppings like chopped cilantro, diced tomatoes, sliced jalapeños, diced avocado, and a dollop of low-fat sour cream if desired.
  9. Serve warm and enjoy your Weight Watchers Taco Casserole!
