Weight Watchers Taco Casserole

Ingredients:
- 1 lb lean ground turkey or chicken
- 1 packet (1 oz) taco seasoning mix (check for low-sodium or make your own blend)
- 1 cup salsa (choose your preferred heat level)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 cup reduced-fat shredded cheddar cheese
- Optional toppings: chopped fresh cilantro, diced tomatoes, sliced jalapeños, diced avocado, low-fat sour cream
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the ground turkey or chicken over medium heat until browned and cooked through, breaking it up into crumbles as it cooks. Drain off any excess fat.
- Stir in the taco seasoning mix, salsa, black beans, and corn kernels. Cook for 2-3 minutes, stirring occasionally, until heated through and well combined.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Sprinkle the shredded cheese over the top of the casserole.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly before serving.
- Garnish with optional toppings like chopped cilantro, diced tomatoes, sliced jalapeños, diced avocado, and a dollop of low-fat sour cream if desired.
