Weight Watchers Pasta Salad

Ingredients:
For the Salad:
- 8 oz whole wheat or chickpea pasta (cooked according to package instructions)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper (any color), diced
- 1/4 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled (optional)
For the Dressing:
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
- 1 teaspoon dried oregano (optional)
Instructions:
- Cook Pasta:
- Cook the pasta according to the package instructions. Drain and let it cool.
- Prepare Vegetables:
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese (if using).
- Make the Dressing:
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, black pepper, and dried oregano (if using).
- Toss Salad with Dressing:
- Pour the dressing over the pasta and vegetables. Toss everything together until well coated.
- Chill:
- Cover the bowl and refrigerate the pasta salad for at least 30 minutes to let the flavors meld.
- Serve:
- Before serving, toss the salad once more and adjust the seasoning if necessary.
- Optional Garnish:
- Garnish with additional feta cheese or fresh herbs if desired.
