Weight Watchers Monterey Sausage Pie
Ingredients:
- 1 pound lean ground turkey or chicken sausage
- 1 cup diced bell peppers (assorted colors)
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1/2 cup diced green onions
- 1 cup reduced-fat shredded cheddar cheese
- 4 large eggs
- 1 cup fat-free milk
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat the oven to 375°F (190°C). Lightly coat a 9-inch pie dish with cooking spray.
- In a skillet over medium heat, cook the lean ground turkey or chicken sausage until fully cooked. Drain any excess fat.
- In the same skillet, add diced bell peppers and onions. Cook until the vegetables are softened.
- In a large mixing bowl, whisk together eggs, fat-free milk, all-purpose flour, baking powder, salt, and pepper until well combined.
- Stir in the cooked sausage, diced tomatoes, diced green onions, and reduced-fat shredded cheddar cheese into the egg mixture.
- Pour the mixture into the prepared pie dish.
- Bake in the preheated oven for 35-40 minutes or until the center is set and the top is golden brown.
- Allow the pie to cool for a few minutes before slicing.
