Keto Sausage Hash Brown Breakfast Casserole

Ingredients:
- 1 lb (450g) ground sausage (choose sugar-free and nitrate-free for keto)
- 4 cups grated cauliflower (to mimic hash browns)
- 1 cup shredded cheddar cheese
- 8 large eggs
- 1/2 cup heavy cream
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground sausage until browned and cooked through. Remove from heat and drain any excess fat.
- Spread the grated cauliflower in an even layer in the prepared baking dish. Top with the cooked sausage.
- In a bowl, whisk together the eggs, heavy cream, chopped green onions, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture over the sausage and cauliflower in the baking dish, ensuring even distribution.
- Sprinkle shredded cheddar cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is melted and golden.
- Remove from the oven and let it cool slightly before slicing and serving.
