1 cup granulated sugar substitute (like Stevia or monk fruit)
2 large eggs
1 teaspoon vanilla extract
1 cup fat-free sour cream
For the Streusel Topping:
1/4 cup brown sugar substitute (like Swerve or Truvia)
1/4 cup chopped nuts (such as walnuts or pecans)
1 teaspoon ground cinnamon
For the Glaze (Optional):
1/2 cup powdered sugar substitute
1-2 tablespoons fat-free milk
1/2 teaspoon vanilla extract
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
Prepare Streusel Topping: In a small bowl, mix together brown sugar substitute, chopped nuts, and ground cinnamon for the streusel topping. Set aside.
Make the Cake Batter: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar substitute until light and fluffy.
Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Alternate Dry Ingredients and Sour Cream: Gradually add the dry ingredients to the wet ingredients, alternating with the fat-free sour cream. Begin and end with the dry ingredients. Mix until just combined.
Layer Batter and Streusel: Spread half of the batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter. Repeat with the remaining batter and streusel.
Bake: Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Cool: Allow the coffee cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Optional Glaze: If desired, whisk together powdered sugar substitute, fat-free milk, and vanilla extract to make a glaze. Drizzle it over the cooled coffee cake.
Slice and Serve: Slice the coffee cake into squares and serve.
Notes:
Sweeteners: Choose sugar substitutes suitable for baking. Adjust the quantities based on your sweetness preference.
Nuts: You can use your favorite nuts in the streusel topping. Make sure to chop them finely.
Portion Control: Pay attention to portion sizes to stay within your desired point range.
