Weight Watchers Maraschino Cherry Cake


For the Cake:

  • 1 box (about 15 ounces) sugar-free yellow cake mix
  • 1 cup unsweetened applesauce
  • 1/2 cup water
  • 3 large eggs
  • 1 teaspoon almond extract
  • 1/2 cup maraschino cherries, chopped (plus extra for garnish, if desired)

For the Frosting:

  • 8 oz fat-free cream cheese, softened
  • 1/2 cup powdered sugar substitute (such as Swerve Confectioners)
  • 1 teaspoon vanilla extract
  • 1/2 cup maraschino cherries, chopped (for garnish)


For the Cake:

  1. Preheat your oven according to the cake mix instructions. Grease and flour a cake pan or coat it with cooking spray.
  2. In a large mixing bowl, combine the sugar-free yellow cake mix, unsweetened applesauce, water, eggs, and almond extract. Mix until well combined.
  3. Fold in the chopped maraschino cherries until evenly distributed in the batter.
  4. Pour the batter into the prepared cake pan.
  5. Bake in the preheated oven according to the cake mix instructions or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before frosting.

For the Frosting:

  1. In a separate bowl, beat together the softened fat-free cream cheese, powdered sugar substitute, and vanilla extract until smooth.
  2. Once the cake is completely cooled, spread the frosting over the top.
  3. Garnish with additional chopped maraschino cherries if desired.
  4. Slice and enjoy!
