1 cup cauliflower rice (or 1 medium cauliflower head, riced)
1/2 cup part-skim mozzarella cheese
1/4 cup marinara sauce (look for one with low sugar)
1/4 cup pepperoni slices (turkey or lean pepperoni to keep it lighter)
1/4 cup diced bell peppers (optional)
1/4 cup sliced mushrooms (optional)
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
Fresh basil (for garnish, optional)
Instructions:
Prepare the cauliflower rice: If using fresh cauliflower, chop it into florets and pulse it in a food processor until it resembles rice. Heat a large skillet over medium heat and sauté the cauliflower rice for about 3–5 minutes, or until tender. Season with salt and pepper.
Assemble the pizza bowls: Preheat your oven to 375°F (190°C). In an oven-safe bowl or a small baking dish, add the cooked cauliflower rice as the base. Spread marinara sauce on top of the rice.
Add the toppings: Layer the pepperoni, bell peppers, and mushrooms on top of the sauce. Sprinkle the mozzarella cheese over everything, then season with oregano, garlic powder, and red pepper flakes.
Bake: Place the bowl in the oven and bake for about 10–12 minutes, or until the cheese is melted and bubbly.
Garnish and serve: Remove from the oven and top with fresh basil (optional). Let it cool slightly before serving.
