Weight Watchers Double chocolate mug muffin – 3 point
Ingredients:
- 2 tbsp self-rising flour
- 1 tbsp unsweetened cocoa powder
- 1 tbsp sugar substitute (like Splenda or Stevia)
- 1 tbsp unsweetened applesauce
- 2 tbsp almond milk (or any low-calorie milk alternative)
- 1/4 tsp vanilla extract
- 1 tbsp mini chocolate chips (optional, but included in the 3 points)
Instructions:
- Mix Dry Ingredients: In a small microwave-safe mug or bowl, whisk together the self-rising flour, cocoa powder, and sugar substitute.
- Add Wet Ingredients: Stir in the applesauce, almond milk, and vanilla extract until well combined. The batter should be smooth.
- Chocolate Chips: Fold in the mini chocolate chips (if using).
- Microwave: Microwave the mug on high for about 45-60 seconds, depending on your microwave’s power. The muffin should rise and look set but still moist.
- Serve: Let it cool for a minute before enjoying your warm, double chocolate mug muffin!
Notes:
- If you don’t have self-rising flour, you can make your own by mixing 1/4 cup of all-purpose flour, 1/4 tsp baking powder, and a pinch of salt.
- Adjust sweetness and consistency by adding a bit more almond milk or sugar substitute, as per your preference.
