Weight Watchers Double chocolate mug muffin – 3 point

Ingredients:

  • 2 tbsp self-rising flour
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp sugar substitute (like Splenda or Stevia)
  • 1 tbsp unsweetened applesauce
  • 2 tbsp almond milk (or any low-calorie milk alternative)
  • 1/4 tsp vanilla extract
  • 1 tbsp mini chocolate chips (optional, but included in the 3 points)

Instructions:

  1. Mix Dry Ingredients: In a small microwave-safe mug or bowl, whisk together the self-rising flour, cocoa powder, and sugar substitute.
  2. Add Wet Ingredients: Stir in the applesauce, almond milk, and vanilla extract until well combined. The batter should be smooth.
  3. Chocolate Chips: Fold in the mini chocolate chips (if using).
  4. Microwave: Microwave the mug on high for about 45-60 seconds, depending on your microwave’s power. The muffin should rise and look set but still moist.
  5. Serve: Let it cool for a minute before enjoying your warm, double chocolate mug muffin!

Notes:

  • If you don’t have self-rising flour, you can make your own by mixing 1/4 cup of all-purpose flour, 1/4 tsp baking powder, and a pinch of salt.
