Greek Chicken Gyros

Ingredients:
For the Chicken Marinade:
- 1 lb (450g) chicken breast or thighs (boneless, skinless)
- 3 tbsp olive oil
- 3 tbsp plain Greek yogurt
- 1 tbsp red wine vinegar
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp ground coriander
- Salt and pepper to taste
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1 cucumber, grated and squeezed to remove excess water
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1-2 garlic cloves, minced
- 1 tbsp fresh dill or mint (optional)
- Salt and pepper to taste
For Serving:
- 4 pita breads or flatbreads
- 1 red onion, thinly sliced
- 1 tomato, thinly sliced
- Lettuce or mixed greens
- Feta cheese (optional)
- Fresh parsley (optional)
Instructions:
1. Marinate the Chicken:
- In a bowl, combine olive oil, Greek yogurt, red wine vinegar, lemon juice, minced garlic, oregano, cumin, paprika, ground coriander, salt, and pepper.
- Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour (or up to overnight) for the best flavor.
2. Make the Tzatziki Sauce:
- In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, and fresh herbs (if using). Season with salt and pepper.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
3. Cook the Chicken:
- Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, until fully cooked and golden brown.
- Remove from heat and let it rest for a few minutes before slicing into thin strips.
4. Assemble the Gyros:
- Warm the pita bread on the grill or in a pan.
- Spread tzatziki sauce on each pita, then top with sliced chicken, red onions, tomatoes, lettuce, and feta cheese (if using).
- Sprinkle with fresh parsley and a little extra tzatziki sauce, if desired.
5. Serve:
- Fold the pita around the filling and wrap it in parchment or foil to keep it secure. Enjoy your homemade Greek chicken gyros!
