Greek Chicken Gyros

Ingredients:

For the Chicken Marinade:

  • 1 lb (450g) chicken breast or thighs (boneless, skinless)
  • 3 tbsp olive oil
  • 3 tbsp plain Greek yogurt
  • 1 tbsp red wine vinegar
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp ground coriander
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and squeezed to remove excess water
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1-2 garlic cloves, minced
  • 1 tbsp fresh dill or mint (optional)
  • Salt and pepper to taste

For Serving:

  • 4 pita breads or flatbreads
  • 1 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • Lettuce or mixed greens
  • Feta cheese (optional)
  • Fresh parsley (optional)

Instructions:

1. Marinate the Chicken:

  • In a bowl, combine olive oil, Greek yogurt, red wine vinegar, lemon juice, minced garlic, oregano, cumin, paprika, ground coriander, salt, and pepper.
  • Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour (or up to overnight) for the best flavor.

2. Make the Tzatziki Sauce:

  • In a bowl, mix Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, and fresh herbs (if using). Season with salt and pepper.
  • Refrigerate for at least 30 minutes to allow the flavors to meld.

3. Cook the Chicken:

  • Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, until fully cooked and golden brown.
  • Remove from heat and let it rest for a few minutes before slicing into thin strips.

4. Assemble the Gyros:

  • Warm the pita bread on the grill or in a pan.
  • Spread tzatziki sauce on each pita, then top with sliced chicken, red onions, tomatoes, lettuce, and feta cheese (if using).
  • Sprinkle with fresh parsley and a little extra tzatziki sauce, if desired.

5. Serve:

  • Fold the pita around the filling and wrap it in parchment or foil to keep it secure. Enjoy your homemade Greek chicken gyros!

Tips:

  • For extra flavor, grill or warm the pita bread before assembling.
  • You can substitute chicken with pork or lamb for a variation in taste.
