Weight Watchers Chunky Monkey Protein Ice Cream

Ingredients:

  • 2 ripe bananas
  • 1 cup plain Greek yogurt (non-fat or low-fat)
  • 1 scoop vanilla protein powder
  • 1/4 cup natural peanut butter
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Bananas:
    • Peel and slice the bananas. Place them on a baking sheet lined with parchment paper and freeze until solid, about 2 hours.
  2. Blend the Ingredients:
    • In a blender or food processor, combine the frozen bananas, Greek yogurt, protein powder, peanut butter, and vanilla extract. Blend until smooth and creamy. You may need to stop and scrape down the sides of the blender a few times.
  3. Add Chocolate Chips:
    • If using, fold in the mini chocolate chips by hand.
  4. Freeze:
    • Transfer the mixture to a freezer-safe container. Freeze for about 1-2 hours, or until it reaches your desired consistency.
  5. Serve:
    • Scoop out and serve immediately or let it sit at room temperature for a few minutes to soften slightly.
