Weight Watchers Chia Seed Pudding Recipe

Ingredients
- 1 cup unsweetened almond milk (or any milk of your choice)
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup (or sweetener of your choice)
- Fresh fruit for topping (optional)
Instructions
- In a medium-sized bowl, whisk together the almond milk, chia seeds, vanilla extract, and maple syrup.
- Let the mixture sit for about 10 minutes, then stir again to prevent the chia seeds from clumping together.
- Cover the bowl and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and thicken to a pudding-like consistency.
- Before serving, give the pudding a good stir. If it’s too thick, you can add a bit more almond milk to reach your desired consistency.
- Top with fresh fruit if desired and enjoy!

- This recipe makes 2 servings.
- You can adjust the sweetness to your liking by adding more or less sweetener.
- For a creamier texture, you can use coconut milk instead of almond milk.
