Weight Watchers Chia Seed Pudding Recipe

Ingredients

  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 3 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (or sweetener of your choice)
  • Fresh fruit for topping (optional)

Instructions

  1. In a medium-sized bowl, whisk together the almond milk, chia seeds, vanilla extract, and maple syrup.
  2. Let the mixture sit for about 10 minutes, then stir again to prevent the chia seeds from clumping together.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and thicken to a pudding-like consistency.
  4. Before serving, give the pudding a good stir. If it’s too thick, you can add a bit more almond milk to reach your desired consistency.
  5. Top with fresh fruit if desired and enjoy!

Notes

  • This recipe makes 2 servings.
  • You can adjust the sweetness to your liking by adding more or less sweetener.
  • For a creamier texture, you can use coconut milk instead of almond milk.
  • This pudding can be stored in the refrigerator for up to 5 days.
