Weight Watchers Apple Crisp

Ingredients:
For the Filling:
- 6 medium-sized apples, peeled, cored, and sliced
- 2 tablespoons lemon juice
- 1/4 cup granulated sugar substitute (like Stevia or monk fruit)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
For the Topping:
- 1 cup old-fashioned oats
- 1/4 cup whole wheat flour
- 1/4 cup granulated sugar substitute
- 1/4 cup light brown sugar, packed
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Filling:
- In a large bowl, toss the sliced apples with lemon juice, sugar substitute, ground cinnamon, and nutmeg. Transfer the apple mixture to a baking dish.
- Prepare the Topping:
- In another bowl, combine the old-fashioned oats, whole wheat flour, sugar substitute, brown sugar, salt, melted butter, and vanilla extract. Mix until the topping is crumbly.
- Assemble and Bake:
- Sprinkle the oat topping evenly over the apples in the baking dish.
- Bake in the Oven:
- Bake in the preheated oven for 35-40 minutes or until the topping is golden brown, and the apples are tender.
- Serve:
- Remove from the oven and let it cool for a few minutes. Serve the apple crisp warm, and optionally, top with a dollop of low-fat vanilla yogurt or a scoop of light vanilla ice cream.
