Ingredients:

– 2 zucchinis, chopped into small pieces (about 2 cups)

– 1 red onion, sliced into half rings (about 1 cup)

– 1 carrot, grated into thin strips (about 1 cup)

– 1 red bell pepper, sliced into strips (about 1 cup)

– 1 yellow bell pepper, sliced into strips (about 1 cup)

– 3 cloves of garlic, finely chopped

– Salt, to taste

– Paprika, to taste

– Garlic powder, to taste

Directions:

1. Preheat the oven to 375°F (190°C) and grease a baking dish.

2. In a large bowl, combine the chopped zucchini, sliced red onion, grated carrot, sliced red bell pepper, sliced yellow bell pepper, and chopped garlic.

3. Season the vegetables with salt, paprika, and garlic powder, adjusting to taste.

4. Mix everything together until well combined, making sure the seasoning is evenly distributed.
