Vegan Waffles

Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 cups non-dairy milk (such as almond milk or soy milk)
1/4 cup vegetable oil
1 teaspoon vanilla extract
Instructions:
Preheat your waffle iron according to its instructions.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, combine the non-dairy milk, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix; a few lumps are okay.
Allow the batter to rest for about 5 minutes. This will help the waffles become light and fluffy.
Lightly grease the waffle iron with cooking spray or oil.
Pour a scoop of the batter onto the preheated waffle iron, spreading it out slightly.
Close the waffle iron and cook according to the manufacturer’s instructions, usually for about 3-5 minutes or until golden brown and crispy.
Carefully remove the waffle from the iron and repeat with the remaining batter.
Serve the vegan waffles warm with your favorite toppings such as maple syrup, fresh fruits, vegan butter, or vegan whipped cream.
