VEGAN RED ONION & ROSEMARY FOCACCIA BREAD


Ingredients:
2 cups all-purpose flour
2 tsp active dry yeast
2 tbsp sugar
2 tbsp olive oil
1 tsp salt
1 tsp dried rosemary
1/2 red onion, sliced
1/2 cup warm water
1/2 cup vegan parmesan cheese (optional)
1 tbsp coarse sea salt (optional)
Instructions:
In a large mixing bowl, combine the flour, yeast, sugar, olive oil, salt, and rosemary.
Slowly add in the warm water and mix until a sticky dough forms.
Knead the dough on a floured surface for 10 minutes, then place it in a lightly oiled bowl and cover with plastic wrap. Let it rise in a warm place for 1 hour.
Preheat the oven to 425°F (220°C).
On a floured surface, roll out the dough into a large rectangle, about 1 inch thick. Place it onto a lightly oiled baking sheet.
Using your fingers, make indentations all over the dough and fill each one with a slice of red onion.
Sprinkle with vegan parmesan cheese and coarse sea salt, if using.
Bake for 20-25 minutes or until the focaccia is golden brown and crispy.
Serve the focaccia hot and enjoy with your favorite toppings!
