Vegan Pumpkin Spice Latte Cake


Ingredients:
For the Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup pumpkin puree (not pumpkin pie filling)
1/2 cup strong brewed coffee, cooled
1/4 cup vegetable oil or melted coconut oil
1/4 cup almond milk (or any plant-based milk)
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Frosting:
1/2 cup vegan butter (softened)
1 1/2 cups powdered sugar
1 tablespoon pumpkin puree
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
For Garnish (Optional):
A sprinkle of ground cinnamon
Pumpkin seeds or chopped nuts
Instructions:

  1. Preheat your oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Prepare the wet ingredients:
    In a large bowl, whisk together the pumpkin puree, brewed coffee, vegetable oil, almond milk, apple cider vinegar, and vanilla extract until well combined.
  3. Mix the dry ingredients:
    In a separate bowl, sift together the flour, sugar, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Bake the cake:
    Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cake:
    Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before frosting.
  7. Prepare the frosting:
    In a medium bowl, beat the softened vegan butter until creamy. Gradually add the powdered sugar, beating well after each addition. Mix in the pumpkin puree, vanilla extract, cinnamon, and nutmeg until smooth and fluffy.
  8. Frost the cake:
    Once the cake is completely cool, spread the frosting evenly over the top and sides of the cake.
  9. Garnish and serve:
    If desired, sprinkle a little ground cinnamon on top and garnish with pumpkin seeds or chopped nuts.
