vegan Philly Cheesesteak

Ingredients:
1 large onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 tablespoons olive oil
1 package seitan or vegan steak strips
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper, to taste
4 hoagie rolls
Vegan cheese, sliced (optional)
Instructions:
Preheat the oven to 375°F.
In a large skillet over medium heat, add the olive oil, onion, and bell peppers. Cook until the vegetables are soft and lightly caramelized, stirring occasionally.
Add the seitan or vegan steak strips to the skillet and cook until heated through, about 5 minutes.
Add the minced garlic, smoked paprika, dried oregano, salt, and pepper to the skillet. Stir until the spices are evenly distributed and everything is fragrant, about 1 minute.
Cut the hoagie rolls in half lengthwise, but leave them connected at one end. Place them on a baking sheet.
Stuff the rolls with the seitan and vegetable mixture. Top with sliced vegan cheese, if desired.
Bake the cheesesteaks in the oven until the cheese is melted and the rolls are lightly toasted, about 10 minutes.
Serve the cheesesteaks hot and enjoy!
