Vegan Peach Cobbler Cinnamon Rolls
Ingredients:
For the Dough:
- 2 ¼ teaspoons (1 packet) active dry yeast
- 1 cup warm almond milk
- ¼ cup vegan butter, melted
- ¼ cup granulated sugar
- 3 ½ – 4 cups all-purpose flour
- ½ teaspoon salt
For the Filling:
- ⅓ cup vegan butter, softened
- ⅓ cup brown sugar
- 2 teaspoons ground cinnamon
- 1 cup diced peaches (fresh or canned)
For the Cobbler Topping:
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup vegan butter, softened
- ½ teaspoon ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons almond milk
- ½ teaspoon vanilla extract
Instructions:
1. Prepare the Dough:
- In a small bowl, dissolve the yeast in warm almond milk. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the melted vegan butter, sugar, salt, and yeast mixture. Stir well.
- Gradually add the flour, ½ cup at a time, until a soft dough forms. You may not need to use all of the flour.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
2. Prepare the Filling:
- In a small bowl, mix together the softened vegan butter, brown sugar, and ground cinnamon until well combined.
- Once the dough has risen, roll it out on a floured surface into a large rectangle, about ¼ inch thick.
- Spread the cinnamon-sugar mixture evenly over the dough, then sprinkle the diced peaches on top.
3. Roll and Cut the Rolls:
- Starting from one long edge, tightly roll up the dough into a log.
- Using a sharp knife, cut the log into 12 equal-sized rolls.
4. Prepare the Cobbler Topping:
- In a small bowl, mix together the flour, sugar, vegan butter, and cinnamon until crumbly.
5. Assemble and Bake:
- Preheat the oven to 350°F (175°C). Grease a baking dish and place the rolls in it.
- Sprinkle the cobbler topping evenly over the rolls.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the rolls are golden brown and cooked through.
6. Make the Glaze:
- In a small bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth.
7. Serve:
- Drizzle the glaze over the warm peach cobbler cinnamon rolls before serving.
