VEGAN OLE KALE SALAD
VEGAN OLE KALE SALAD
Ingredients:
- 1 bunch of kale, washed and chopped
- 1 can of black beans, rinsed and drained
- 1 avocado, diced
- 1 red bell pepper, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup pepitas (pumpkin seeds)
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large bowl, combine the chopped kale, black beans, diced avocado, chopped red bell pepper, thinly sliced red onion, and chopped cilantro.
- In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, cumin, salt, and black pepper to make the dressing.
- Pour the dressing over the kale salad and toss to coat.
- Sprinkle pepitas on top of the salad for some extra crunch.
