VEGAN OLE KALE SALAD 

Ingredients:

  • 1 bunch of kale, washed and chopped
  • 1 can of black beans, rinsed and drained
  • 1 avocado, diced
  • 1 red bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup pepitas (pumpkin seeds)

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large bowl, combine the chopped kale, black beans, diced avocado, chopped red bell pepper, thinly sliced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, cumin, salt, and black pepper to make the dressing.
  3. Pour the dressing over the kale salad and toss to coat.
  4. Sprinkle pepitas on top of the salad for some extra crunch.
  5. Serve and enjoy your vegan ole kale salad!
