Vegan Oatmeal, apple and carrots

Ingredients (Serves 2)
- 1 cup rolled oats (gluten-free if needed)
- 2 cups plant-based milk (almond, oat, or soy) or water
- 1 small apple, grated (or diced)
- ½ cup grated carrot
- 1 tbsp maple syrup (or sweetener of choice)
- ½ tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tsp vanilla extract
- 1 tbsp chia seeds or flaxseeds (for extra fiber & omega-3s)
- A pinch of salt
Optional Toppings:
- Chopped nuts (walnuts, pecans, or almonds)
- Raisins or dried cranberries
- Extra apple slices or shredded carrots
- A drizzle of almond butter or peanut butter
Instructions
1️⃣ Cook the Oatmeal
- In a saucepan, add oats, plant milk (or water), grated apple, and grated carrot.
- Stir and bring to a gentle simmer over medium heat.
2️⃣ Add Flavor
- Mix in cinnamon, nutmeg, vanilla, and a pinch of salt.
- Stir occasionally and cook for 5-7 minutes, until thick and creamy.
- Add chia or flaxseeds in the last 2 minutes.
3️⃣ Sweeten & Serve
- Remove from heat and stir in maple syrup.
- Pour into bowls and top with nuts, dried fruit, or nut butter.
