Vegan Linguine with mushrooms, garlic, parsley, thyme, salt, pepper, and olive oil
Ingredients:
8 oz linguine pasta
2 tbsp olive oil
3 cloves garlic, minced
8 oz mushrooms, sliced
1/4 cup fresh parsley, chopped
1 tsp fresh thyme, chopped
Salt and pepper, to taste
Instructions:
Cook the linguine according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
Add the minced garlic to the skillet and cook for 1-2 minutes, or until fragrant.
Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until they are tender and have released their moisture.
Add the chopped parsley and thyme to the skillet and stir to combine. Cook for 1-2 minutes, or until the herbs are fragrant.
Season the mushroom mixture with salt and pepper to taste.
Add the cooked linguine to the skillet with the mushroom mixture and toss to combine.
Serve hot, garnished with additional chopped parsley if desired.
