Vegan donut
Vegan donut recipe
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
For the glaze:
- 1 cup powdered sugar
- 2-3 tablespoons unsweetened almond milk
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a donut pan with cooking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the almond milk, applesauce, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 10-12 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar, almond milk, and vanilla extract until smooth.
- Dip each donut into the glaze, letting the excess drip off, and return them to the wire rack to set.
