Vegan buffalo shiitake wrap
Ingredients:
4 large tortillas
1 cup sliced shiitake mushrooms
1/2 cup buffalo sauce
1/2 cup vegan mayonnaise
2 tablespoons apple cider vinegar
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups shredded lettuce
2 cups chopped tomatoes
1/2 cup sliced red onion
Instructions:
Preheat your oven to 375°F (190°C).
Toss the shiitake mushrooms in buffalo sauce until they are fully coated.
Place the coated shiitake mushrooms onto a baking sheet lined with parchment paper and bake for 10-12 minutes, or until they are tender and slightly crispy.
While the shiitake mushrooms are baking, prepare the vegan mayo sauce by mixing together the vegan mayonnaise, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl. Set aside.
Warm the tortillas in the oven or on a griddle.
Assemble the wraps by spreading a generous amount of the vegan mayo sauce onto each tortilla.
Add a layer of shredded lettuce, followed by the baked shiitake mushrooms, chopped tomatoes, and sliced red onion.
Roll up the tortillas tightly and slice them in half.
