Vegan Broccoli Pizza

Ingredients:
- 1 pre-made pizza crust (check for vegan options or make your own)
- 1 cup broccoli florets, chopped into small pieces
- 1/2 cup marinara sauce (check for vegan-friendly brands)
- 1/2 cup vegan cheese, shredded (use your favorite variety)
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: sliced mushrooms, sliced bell peppers, vegan sausage crumbles, etc.
Instructions:
- Preheat the oven: Preheat your oven according to the instructions on the pizza crust package or to 425°F (220°C).
- Prepare the broccoli: In a small pot of boiling water, blanch the broccoli florets for about 2 minutes, then drain and set aside.
- Sauté the onions and garlic: In a skillet, heat the olive oil over medium heat. Add the sliced onions and minced garlic. Sauté until the onions are softened and translucent, about 3-4 minutes. Remove from heat and set aside.
- Assemble the pizza: Place the pre-made pizza crust on a baking sheet or pizza stone. Spread the marinara sauce evenly over the crust, leaving a small border around the edges. Sprinkle the shredded vegan cheese over the sauce. Then, distribute the blanched broccoli florets, sautéed onions, and garlic evenly over the cheese.
- Bake the pizza: Transfer the assembled pizza to the preheated oven. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Serve: Remove the pizza from the oven and let it cool for a minute or two before slicing. Serve hot and enjoy your delicious Vegan Broccoli Pizza!
