Vegan Black Bean Brownies
Ingredients:
1 can (15 oz) black beans, drained and rinsed
1/2 cup granulated sugar (or coconut sugar for a less refined option)
1/2 cup unsweetened cocoa powder
1/4 cup applesauce (as an egg substitute)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp olive oil (or coconut oil for a neutral taste)
1 tsp balsamic vinegar
2 tbsp vegan chocolate chips
2 tbsp chopped walnuts (optional, can be omitted)
Instructions:
Preheat Oven: Preheat your oven to 370°F (188°C). Grease an 8×8 or 9×9 inch pan or line it with parchment paper.
Prepare the Batter:
In a food processor or blender, combine the black beans and applesauce. Blend until smooth and creamy.
Add the sugar, cocoa powder, baking powder, baking soda, olive oil, and balsamic vinegar. Blend again until well mixed.
Mix in Add-ins:
Transfer the batter to a mixing bowl. Stir in half of the vegan chocolate chips and the chopped walnuts, if using.
Bake:
Pour the batter into the prepared pan and spread it evenly.
Sprinkle the remaining chocolate chips on top.
Cook: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
Cool and Slice:
Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Cut into 16 pieces.
