Vegan Banana Cake
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 ripe bananas, mashed
- 3/4 cup brown sugar (you can adjust this to your taste)
- 1/2 cup vegan butter or coconut oil, melted
- 1/2 cup almond milk (or any non-dairy milk of your choice)
- 1 teaspoon vanilla extract
Optional add-ins:
- 1/2 cup chopped nuts (walnuts or pecans work well)
- 1/2 cup vegan chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix together the mashed bananas, brown sugar, melted vegan butter or coconut oil, almond milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- If using, fold in the chopped nuts or vegan chocolate chips.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, slice and serve your delicious vegan banana cake! Enjoy it as is or with a dollop of vegan whipped cream or a scoop of dairy-free ice cream.
