Vegan Banana Cake


  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 3/4 cup brown sugar (you can adjust this to your taste)
  • 1/2 cup vegan butter or coconut oil, melted
  • 1/2 cup almond milk (or any non-dairy milk of your choice)
  • 1 teaspoon vanilla extract

Optional add-ins:

  • 1/2 cup chopped nuts (walnuts or pecans work well)
  • 1/2 cup vegan chocolate chips


  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix together the mashed bananas, brown sugar, melted vegan butter or coconut oil, almond milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. If using, fold in the chopped nuts or vegan chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread it out evenly.
  7. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, slice and serve your delicious vegan banana cake! Enjoy it as is or with a dollop of vegan whipped cream or a scoop of dairy-free ice cream.
