🌿 Vegan Balela Salad Recipe

🥗 Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh mint, finely chopped (optional but recommended)
  • 2–3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp red wine vinegar (or apple cider vinegar)
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • Salt and pepper to taste

🥣 Instructions:

  1. Mix the beans:
    In a large bowl, combine the chickpeas and black beans.
  2. Add the veggies and herbs:
    Toss in cherry tomatoes, red onion, cucumber, parsley, and mint.
  3. Make the dressing:
    In a small bowl or jar, whisk together olive oil, lemon juice, vinegar, minced garlic, cumin, salt, and pepper.
  4. Combine everything:
    Pour the dressing over the salad and toss well to coat.
  5. Chill (optional):
    Let it sit in the fridge for 30 minutes to an hour to let the flavors meld (optional but delicious).
  6. Serve:
    Serve cold or at room temperature. Great as a side dish, on pita bread, or even in a wrap!
