🌿 Vegan Balela Salad Recipe

🥗 Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh mint, finely chopped (optional but recommended)
- 2–3 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp red wine vinegar (or apple cider vinegar)
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- Salt and pepper to taste
🥣 Instructions:
- Mix the beans:
In a large bowl, combine the chickpeas and black beans. - Add the veggies and herbs:
Toss in cherry tomatoes, red onion, cucumber, parsley, and mint. - Make the dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, vinegar, minced garlic, cumin, salt, and pepper. - Combine everything:
Pour the dressing over the salad and toss well to coat. - Chill (optional):
Let it sit in the fridge for 30 minutes to an hour to let the flavors meld (optional but delicious). - Serve:
Serve cold or at room temperature. Great as a side dish, on pita bread, or even in a wrap!
