🍎 Filling Ingredients

6 medium apples (Granny Smith + Honeycrisp combo works well), peeled, cored, sliced

2 tablespoons coconut oil or vegan butter

ΒΌ cup brown sugar or coconut sugar

2 tablespoons maple syrup

1 tablespoon lemon juice

1Β½ teaspoons cinnamon

ΒΌ teaspoon nutmeg

1 tablespoon cornstarch or arrowroot starch

ΒΌ teaspoon salt

1 teaspoon vanilla extract

🍯 Optional Caramel Sauce (for extra richness)

ΒΌ cup canned full-fat coconut milk

ΒΌ cup brown sugar

1 tablespoon vegan butter or coconut oil

Pinch of salt

(Simmer together for 5–7 min until thickened. Stir in a splash of vanilla at the end.)

1 cup rolled oats

ΒΎ cup all-purpose flour (or almond flour for gluten-free)

Β½ cup brown sugar or coconut sugar

Β½ teaspoon cinnamon

ΒΌ teaspoon salt

Β½ cup vegan butter or coconut oil, cold and cut into small cubes

  1. Preheat & Prepare Apples

Preheat oven to 350Β°F (175Β°C).

In a large skillet or saucepan over medium heat, melt coconut oil or vegan butter.

Add the sliced apples, sugar, maple syrup, lemon juice, cinnamon, nutmeg, salt, and vanilla. Cook for about 8–10 minutes, until apples are just starting to soften and release juices.

Sprinkle in the cornstarch and stir well. Let simmer for another 2 minutes until the sauce thickens into a caramel-like consistency.

Pour mixture into a greased 8×8 inch or similar-sized baking dish.

  1. Make the Streusel

In a bowl, combine oats, flour, sugar, cinnamon, and salt.

Add cold vegan butter and use a fork or your hands to mix until crumbly and clumping together (like wet sand).

Sprinkle evenly over the apple mixture.

  1. Bake

Bake for 35–45 minutes, until the top is golden brown and the filling is bubbling around the edges.

  1. Cool & Serve

Let cool for at least 10–15 minutes to allow the filling to thicken.

Serve warm with vegan vanilla ice cream, coconut whipped cream, or a drizzle of the optional caramel sauce.
